Mini Cherry Cheesecakes
Mini Cherry Cheesecakes are a favorite at the Kaehler household!
|
24 Nilla wafers
3 - 8ounce packages of cream cheese
1 cup sugar
1 Tbsp lemon juice
3 tsp vanila
4 eggs
1 can pie filling (strongly recommend CHERRY)
24 cupcake/muffin liners

Line muffin pan with liners and place one wafer in the bottom of each. Mix cream cheese, vanilla, and sugar on medium until well blended. Add eggs. Mix. Pour filling over wafers until each cup is 1/2 to 2/3 full. Bake 15 minutes at 350 degrees. Remove from pan when cool and top each with a spoonful of pie filling.
